Producer: Miguel Torres launched the Celeste line as a love letter to Ribera del Duero’s dramatic, star-splashed nights, and their Verdejo carries that same sense of celestial drama into neighboring Rueda. Verdejo has been the pride of this region since the 11th century, when it was first cultivated to withstand cool nights and scorching days on the high plateau. Celeste plays into that duality beautifully — it’s a wine born from extremes, shaped by altitude, and anchored in centuries of Spanish white-wine tradition.

Vineyard & Winemaking: This Verdejo comes from vineyards planted at seriously high elevations, where daytime sun coaxes ripe fruit while the nights lock in electric acidity. Torres keeps the winemaking refreshingly straightforward: cool fermentation to amplify aromatics, stainless steel to preserve snap and sparkle, and meticulous fruit selection so only the best clusters make it to bottle. It’s a clean, modern expression, but you can still feel the old-world backbone humming underneath.

Tasting Notes: Picture yourself biting into a just-peeled lime while someone waves a bouquet of fennel fronds and white flowers nearby — that’s the opening act.
