Tasting Notes: The 2023 is bone dry and immediately expressive — quince, green apple, and white pear on the nose, with a characteristic thread of beeswax and chalky minerality running underneath. At 12% ABV it's light on its feet, but don't mistake that for simple: the palate has a lovely waxy texture, a zippy, mouthwatering acidity, and a finish that lingers with citrus pith and wet stone.
