Tasting notes: A full and elegant wine with a nose that displays a discreet bouquet of white flowers, such as acacias and lime blossom. This will develop well as it ages. Pairs well with seafood, ham, and cheeses.
Producer: Dating back to 1795, Domaine Barat lies just outside the city of Chablis in the village of Milly. The matrimony of Joelle and Michel Barat in 1972 brought together the 21 hectares of vineyards that are now run by their two children, Angèle and Ludovic Barat. They continue to share their parents’ passion for the land as the family’s sixth generation. Following the guidance of her father, Angèle took on the responsibility as winemaker in 2008. She maintains a gentle approach throughout every step of the winemaking process to ensure that the identity, integrity and freshness of the fruit and terroir are never compromised.
Vineyard and Winemaking: Vaillons is one of the largest Premier Cru vineyards in Chablis, located in a valley to the southwest of Chablis town itself. Here, on the western side of the Serein river, a southeasterly aspect and high-quality Kimmeridgian soils make for an excellent terroir. Chardonnay-based wines made in the Vaillons vineyard tend to be floral and more delicate than those from the other side of the river, but still retain Chablis' characteristic intense minerality.
