All of the vineyards are head-trained, dry farmed, and cared for with the most traditional means of viticulture. These practices reduce the yields of the vines and create a more authentic expression of Verdejo in the final wine, that moves beyond the simple, commercialized, watery wines from Rueda that now flood the market. All of the vines used for the “Nisia” are ungrafted, as this part of D.O Rueda is phylloxera resistant, due to the extremely sandy soils. It’s a parcel selection of three sites that were planted back in 1920, 1921, and 1942. Nisia Las Suertes is named after Finca Las Suertes – a 6Ha. parcel of ungrafted vines planted originally in 1886. This spectacular pre-phylloxeric vineyard is planted with the original clones of Verdejo that are indigenous to Rueda. In many cases, bulk oriented vineyards will yield up to 15 tons per hectare – Finca Las Suertes yields 1 ton per acre. The incredible small berries and bunches produce wines with intense concentration, gylceric quality, and phenolic content which produce a serious, austere wine that marries perfectly with sur lie ageing. The plot is named 'Rochasser' meaning 'the rock' and is made up of the same limestone found in Côte de Beaune with 20-30 cm of white gravel. The 2015 'Ascendance' shows ground white pepper and old leather on the nose. On the palate there are red and blue fruits, pepper, rose petals and a beautiful earthiness that gives this wine it’s sense of place. The wine is aged only in “demi-muids” on the lees for nine to ten months before racking.\u003c\/p\u003e\n\u003cp\u003eWhite wines from the Maconnais have historically been treated as little brothers to the big name villages of the Cote d’Or, but Comte Lafon is shaking up that narrative. These beautiful wines from the south are every bit as compelling as many Village and even Premier Cru level wines that you will find from more northerly communes like Meursault and Chassagne-Montrachet. This Mâcon-Milly-Lamartine 2019 was fermented and aged for nearly one year in casks, showing great elegance and breed, with a firm citrus underpinning the ripe apple fruit. The vines were planted from 1915 to 2000 upon beds of sandy, chalky loam. The winery sorts and selects for the healthiest grapes. Following a cold maceration, the grapes are destemmed and pressed in a closed pneumatic press. The fermentation is done by selected indigenous yeast and is maintained at very low temperatures to retain some dissolved CO2. The must undergoes first fermentation in 1,000L wooden vats, where the wine is left until April. As its name might suggest, it is actually neither a mountain nor is it composed of red earth. Instead the appellation is an anticline of the Yakima fold belt, a series of geologic folds that define a number of viticultural regions in the surrounding area. It is on the eastern edge of Yakima Valley with slopes facing southwest towards the Yakima River, ideal for the ripening of grapes. The area’s springtime proliferation of cheatgrass, which has a reddish color, actually gives the area the name, \"Red\" Mountain.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eRed Mountain produces some of the most mineral-driven, tannic and age-worthy red wines of Washington and there are a few reasons for this. They primarily use neutral oak (used 4 to 5 times) to allow in small amounts of oxygen. All bottles are closed with a biodegradable DIAM cork.
